Today I tested out the final recipe for a big event I have coming up. I am "catering" my first event in two weeks. I use quotations because I feel like an imposter in the catering world. I didn't set out to do this, but I am looking forward to the challenge. This will be the biggest baking task I have ever taken on. I'm very nervous but also look forward to the feeling of accomplishment that will come with the end.
I've never been a huge fan of vanilla cake. I'm a chocolate girl through and through! I've never found a vanilla cake recipe that wasn't dry and never really bothered to look all that hard. Leading up to this event, I knew that I would have to make vanilla cupcakes. I stumbled upon this recipe the other day and decided that I should give it a go. I was quite happy with the results. It was so simple and came out nice and moist. Since it's the day before St. Patrick's day, I decided to make my buttercream green and go with the theme.
