I thought, given the name of my blog that I should start with a recipe from my Mom. The truth is my Mom really didn’t bake all that much when I was growing up, nor did she cook. She preferred to stay out of the kitchen (mostly for good reason), and leave the cooking up to my Dad. Today my Dad is a fabulous cook, but has never done much baking aside from his famous cheesecakes (which I have yet to try). Despite the trend, my Mom did share with me a few truly amazing recipes.
I started to get into baking when I moved away to go to university. What started as something I did occasionally has become an absolute obsession and after being told many times by friends that I should start a blog, here I am! Always humble, I will warn you now: I am not a great writer, nor is much of what I bake very unique. I do like to experiment with flavours, but at the same time would have to say that classic recipes are classics for a reason…they taste good!
Despite trying a multitude of recipes over the years, I still believe my Mom’s oatmeal chocolate chip cookies are the best in the world. With this in mind, I thought it appropriate to start my blog off with them. So here it goes...
Oatmeal Chocolate Chip Cookies
1 cup flour
1 tsp baking soda
1/2 tsp salt
1 cup butter, softened
3/4 cup brown sugar
3/4 cup white sugar
1 tsp vanilla
3 cups oats
1 cup chocolate chips
1 cup chopped pecans
1. Preheat oven to 350 degrees. Combine flour, baking soda, and salt in a small bowl.
2. Cream together butter, sugars. Beat in eggs and vanilla. Add in dry mixture.
3. Stir in oats, chocolate chips, and pecans.
4. Drop onto cookie sheet and bake 9-10 minutes.
